"Food that is fresh on the plate and doesn’t sit around for long is also the healthiest, he says.
Healthy nutrition is also the focus of the school’s collaboration with the center of competence for nutrition (kern). Soon, the first activities will be launched that will not only benefit the 30 to 60 students that herbert bulheller cooks for every day.
"For example, we want to put on plays on the subject of nutrition – the bushwhackers have already worked something out – or work together on a cookbook that also includes dishes from other cultures," he says, says thomas schmidt, who supervises the project for kern.
An organic breakfast could also be offered as part of the project. The goal is to raise awareness of healthy eating at school and among parents. Kern especially wants to draw attention to the regionality or the ecological footprint of food production.
But the competence center also hopes to gain new insights from the model project. It wants to advertise a master’s thesis at the universities, which will accompany the project at the school. This will also analyze the dishes prepared by school chef herbert bulheller, which he adapts to the specifications of the school’s own nutrition advisor.
Herbert bulheller provides the healthy meals especially for the schoolchildren who attend the all-day classes. Next year there will be even more who will enjoy the school cook’s lunch menus, because a new all-day class will be added.
"The bound all-day class has to eat here, so it’s all the more important that it’s healthy", says MGFG director hans-werner fischer. He hopes that the project will make it clear to the children that healthy food is also important for their well-being at school.
But the schoolchildren themselves have already started thinking about healthy food at school. For example the SMV. She has set up guidelines to avoid cola and coffee in particular. Coke is no longer available for purchase during recess, and coffee is served only to high school students.
But healthy food doesn’t always have to mean going without. At least that’s what the school cook says, smiling as he interjects: "I also have a healthy dessert in the school kitchen."
